Cupcake #6

Aren't you glad I didn't say ORANGE cupcake


I remember being a kid going to the dairy to get ice cream. We would always choose between fudgesicle, big stick, and an creamsicle.  So when I had a request from a mom with a 4yr old for orange cupcakes, apparently it is his favorite color, I had to some how incorperate it into the cupcake! So I made an orange creamsicle cupcake.  YUMMY. You know how hard it is to find orange sprinkles? I went to Walmart, Fry's, Micheal's and Target, no orange sprinkles. So I bought mini m&m's and used the orange ones. I never thought that orange cupcakes could taste so good.


Cupcake Recipe

1 Package white cake mix
1 package cheesecake instant pudding mix
1 package orange jellotin
4 eggs (lightly beaten)
1 teaspoon vanilla
1/3 cup vegetable oil
1 1/4 cup orange juice

Preheat oven to 350 degrees.
Mix all ingredients together in mixer until batter is smooth. Fill liners until 2/3 full. Bake for 18 mins or until toothpick come out clean. Put on cooling rack to cool completly before frosting.

Frosting Recipe

1/2 stick of butter (room temp)
1 8oz. package of cream cheese
1 teaspoon orange abstract
1 teaspoon vanilla
6 cups of powder sugar
orange food coloring

Beat butter and cream cheese until smooth and fluffy.  Add orange and vanilla abstract and mix, turn mixer on low and gradually add powder sugar. Divide the frosting into 2 bowls and add food coloring to one. In a piping bag fill one side orange and the other with white. Frost cupcakes!

Baby Shower Cupcake
My future sister in law had a babyshower over the weekend! Guess what I made, you guessed it, cupcakes! They decided not to find out the gender so the theme of the shower was Americana. What better than red velvot and blue velvet cupcakes? I saw the idea on pinterest of the frosting being a egg and putting a fondant sperm on the top of it so I had to do it. I mean it was a baby shower!

The recipe made do many I even used 2 dozen for the teacher appreciation luncheon at my kids school. No, I didn't put the fondant sperm on those, that would have been a little awkward. Instead, i added another poof of frosting and grated chocolate on top.

Confession # 4

I love this cupcake toolbox! It holds  everything I need, all my food coloring, frosting tips, piping bags, cupcake cups, candles, reciepes and sprinkles.  Before I was given I my tips were scattered around the kitchen drawers and every time I went to frost it was a scavenger hunt to find the one I needed. Thanks to my amazing mother in law I now have cupcake box and I am organized!

Cupcake #4

Carrot Pineapple Coconut Cupcakes with cream cheese frosting!! 

 These are my favorite cupcakes ever! This cake is so moist but not too heavy. My 6yr old and 5yr old always ask for this cupcake on their birthday.  I mean what child asks for carrot cake? I know I didn't. I love the toasted coconut on the top it adds a little crunch.  I am obsessed with coconut...maybe because it reminds me of Hawaii!
 

 These are my go to cupcakes.  Whenever we have extra carrots instead of making a salad to use it up I think of these. These make the perfect breakfast after being chilled in the fridge overnight.

Confession #3

I HATE CAKE POPS!


So here is the story....


Over 2 years ago my friend and I attempted cake pops.  We had been to parties where they were so cute and looked pretty easy, well they weren't. We FAILED! Every last one of them fell off the sticks when we dipped them in the chocolate. After that experience I really didn't ever want to attempt them again. 


So when I go a text saying that the committee I am on volunteered me to make 80 cake pops, not just regular cake pops but ones that look like pigs. I was mad. I make cupcakes  NOT cake pops.  I told them that I would try but there is no promises... and everyone I talked to assured me that they were easy to make (but not one of them have ever made them before). So where did I turn? You tube and the dessert decorating blog. They make it look super easy so I figured I could do it.


After I bought all the supplies I went to work. The worst thing about them is how time consuming they are. After you cook the cake you have to let it cool.  After it cools I put it in the food processor and made it into crumbs and added a 1/3 cup of frosting and mush it together.  I formed it into balls and stuck it in the fridge overnight.  The next morning I heated up the chocolate in the Wilton chocolate melter my mother in law gave me! I learned not to use too hot of chocolate because it changes the color of it when it cools and also adds white dots on it. Then I added the decorations, the m & m's and sprinkle ears while the chocolate was still soft.  Once it hardened I drew the face on. Some of them turned out and some didn't. 

After making all 80 of them I learned that I don't not like to make them, they don't make me happy. 

 
This is one that cracked because I rushed it and hardened it in the freezer no the fridge.

Cupcake #3

Chocolate Toffee Caramel CupCake

I have made these before for a bridal shower and Relief Society Party, they are a crowd favorite so usually when I get asked to do cupcakes people remember these and want them. They are the most time consuming cupcakes I make. There are so many steps and they are a very messy project but they are amazing so it is worth it.

Step one.....
Make the cupcake. I make a chocolate cupcake sometimes I even put toffee pieces in the batter to add more flavor.
Step two...
Make frosting. I make a butter-cream frosting which is a little time consuming because you haveto us a double broiler to get the eggs and sugar (which I ran out of so I ran to my amazing neighbors and took the rest of theirs) to the right temp before fluffing it. Once the frosting is made I add homemade caramel sauce to it so it tastes like caramel whip-cream :)

Step three...
Frost a layer of frosting on the cupcake and put in freezer.



Step four...
Make chocolate sauce while cupcakes are in the freezer, then let it cool so it is not hot.

Step five...
Dip cupcake into chocolate sauce and cover the edges with toffee.

Step six...
Put cupcakes back into the freezer so the chocolate sets.

Step seven...
Frost the top of the cupcakes and add caramel syrup on top.

Frost the top of the cupcakes and add caramel syrup on top.

They take a long time but it is so fun to share the finished projects with friends and neighbors.

Confession #2



I couldn't resist the warm sun and the green grass today. No cooking for me, who whats to be stuck in the kitchen when you could be playing in the park with the kiddos! I mean Papa Johns and a Thirst Buster. Sounds like the perfect dinner to me. The only thing that could have made it better is if my hot hubby was there.

Confession...my kids are the cutest even with their wind blown hair! I know you are saying no yours are but take another look. Mine are cuter:)

Cupcake #2



I confess I had some trouble with this cupcake. Not so much the cupcake but the frosting. I needed to make a cupcake that wasn't chocolate, but it was for a young girl so I didn't want to do carrot or red velvet so this is what I came up with a raspberry cupcake with butter cream frosting. My recipe said it made 2 doz but it ended up making more like 3. After all of them were baked I worked on the frosting and that is where the trouble began. I don't like the taste of butter cream frosting I think it is bland. The cupcake tasted good but the frosting was missing something....flavor. Having used all my fresh raspberries I dumped the rest of my raspberry jelly into it. Oh man did that change the whole taste...much better. Although it wasn't chocolate it was still pretty yummy.

Cupcake #1



This is a Snickers Cupcake. I make 2 dozen of these for a girl in my wards 17th birthday! It is a chocolate cupcake with a caramel whip cream frosting! I know your mouth is watering....well here is the kicker, I cut the center out and added homemade caramel and snickers on the inside. I garnished it with more of that Delicious homemade caramel and some chopped snickers. This cupcake was too die for!!
